1 bag of Asturi Bruschettini, Classic Virgin Olive Oil flavor
8 Roma tomatoes, finely diced
⅓ cup of chopped fresh basil
¼ cup shredded Parmesan cheese
2 cloves of garlic, minced
1 tbsp. balsamic vinegar
1 tsp. extra virgin olive oil
¼ tsp. kosher salt
¼ tsp. freshly ground black pepper
Gather the tomatoes, basil and a cutting board with a knife specifically sharpened for slicing.
One at a time, slice and then dice the Roma tomatoes until you have a fine consistency. Set aside in a mixing bowl.
Take your fresh basil leaves and stack them on top of each other. Then, roll that stack of basil until it resembles a cigar. Slowly chop the basil. The cigar shape makes it easier to make smaller cuts.
Combine chopped basil into the bowl of diced tomatoes and follow with all remaining ingredients, adding the olive oil and balsamic vinegar last.
Fold ingredients together with a mixing spoon.
With a teaspoon, scoop out your bruschetta mixture onto Asturi’s Classic Virgin Olive Oil Bruschettini.
