1 bag of Asturi Bruschettini, Classic Virgin Olive Oil flavor
½ cup Parmesan cheese
1 ⅓ tbsp. parsley
¼ tsp. paprika
½ cup flour
⅛ cup milk
1 pound of cod fillet
Preheat oven to 400° F.
Break the Bruschettini by placing it in a zip-lock bag and pounding it with a meat pounder.
In a bowl, combine Bruschettini, Parmesan cheese, parsley and paprika.
Place flour in a separate bowl and place eggs in a third bowl (we promise it’ll be worth cleaning all these bowls).
Dip each fillet in flour, then in the egg mixture and lastly into the Bruschettini crumbs.
Make sure each fillet is completely coated. Once this task is completed, place fillets in the oven and bake for approximately 15 minutes. Enjoy!
