1 bag of Asturi Bruschettini, Classic Virgin Olive Oil flavor
1 bag of spinach mix
1 handful of sliced almonds
1 cup of quinoa
1 strawberry balsamic dressing
Bring water to a boil and add in your quinoa, stir and cook uncovered for 10-12 minutes.
Strain and dry quinoa and put aside.
Rinse your spinach and dry, add to a bowl.
Rinse and cut strawberries into small pieces, add to bowl.
Fold in the quinoa until well mixed.
Take several Bruschettini crackers and place them in a bag, gently crush the crackers with a heavy object. Add to salad mix.
Top with sliced almonds and dressing of choice (we recommend strawberry balsamic).
